Spring is here and time for grilling, which is an easy way to to get a few meals for the week. Pork chops were on the menu for my home for the beginning of the week and added chicken to the grill for salads and wraps for weekly lunches. These amazing grilled pork chops were a hit and a time saver.
To make it super easy, I marinated them in the morning while making lunches so they were ready to go that night. Then added zucchini to the grill and homemade mash potatoes which only took 20 minutes that evening of of total cook time. I have to admit that zucchini is not well received by my kids so they are given a choice of another “color”. The rule is they must pick a side fruit or a salad to go in its place.
Here is the quick delicious Pork Chop Marinade:
2 Tbsp brown sugar
2 tsp of chili powder
dash of salt and pepper
1 TBS of olive oil
1 1/2 cup of balsamic vinegar
1/4 cup of molasses
1 TBS of Dijon mustard
Mix all ingredient together and marinade pork chops for at least 2 hours before grilling.
