For the month of June, you will receive each week four simple recipes that include 1 pot dishes, kid friendly recipes and delicious salads for dinner or lunch. All recipes are Simple and healthy plus you will save time and money. Can I hear a “yes?” And……as a part of Simple Designer Meals, you get nutritional information sent to you with each meal. You will quickly know the calories, protein, carbs, fat and fiber of each dish. There is no doubt that eating more meals at home is a key factor in good health and weight management. Here is a sneak peak that my family loved adapted from Paleo Newbie.
Skillet Shrimp and Sausage
1 lb of medium shrimp, peeled and deveined
6 oz of pre-cooked smoked turkey sausage
3/4 cup of red bell pepper
1/2 of medium yellow onion
1/4 cup of chicken stock
2 cloves of garlic
salt and pepper to taste
2 tsp of Old Bay Seasoning
Heat large skillet over medium heat with olive oil. Season shrimp with Old Bay Seasoning and cook 3-4 minutes. Remove and set aside. Add another TSP of olive oil and cook onions and bell peppers for about 2 minutes. Add sausage a and zucchini and cook 2 minutes. Put cooked shrimp back in skillet with garlic and cook everything for 1 minute. Pour Chicken Stock into pan and mix through to moisten everything. Add salt and pepper to taste.
Serve with fresh vegetables or salad.
