This week is super busy at my house with work, after school homework and evening school events. Careful planning to stay on a healthy eating plan was a must to have a meal at home. For a cold night and dinner ready for a busy Monday, we had this delicious honey Parmesan Pork Loin Roast served with salad and mashed sweet potatoes.
It was hit with plenty of left overs for another late night with no time to cook this week. Remember to stay healthy and fit, it just takes a little bit of planning and you can have a home cooked meal with time at the table with your family.

Crock Pot Honey Parmesan Pork Loin Roast
1 3-4lb boneless pork loin roast
2/3 cup grated parmesan cheese
1/2 cup of honey
3 Tbsp soy sauce
2 Tbsp of dried Italian seasoning
2 Tbsp of chopped garlic
2 Tbsp of olive oil
1/2 tsp of salt
1/2 cup chicken broth
Place roast in Crockpot. Combine all other ingredients in a bowl and pour over roast. Cover and cook on low for 6hours.
