It was a “Simple Designer Meal” score at the Breaux house. It took less than 30 minutes to prepare and cook plus it gave us family time around the table at home with this quick meal.
Balsamic Pan Chicken
1/4 cup + 2 Tbsp of Italian Lite salad dressing
1 TBS of Balsamic vinegar
1 1/2 Tbsp honey
1 1/4 lb of chicken breast tenderloins
2 Tbs olive oil
1lb fresh asparagus, trimmed….or green beans
In a mixing bowl, whisk together all ingredients except for chicken and vegetables. Heat olive oil in skillet over medium high. Season chicken with salt and peppers and place in skillet. Cook about 6-7 minutes rotating once halfway through until chicken is cooked. Add half the dressing mixture to skillet and rotate chicken to evenly coat. Transfer chicken to plate and leave sauce in skillet. Add asparagus and carrots and season with salt and pepper cooking until crisp and tender, about 4 minutes. Transfer veggies to plate. Add remaining dressing to skillet and stir constantly until thicken about 1 minute. Pour over chicken and vegetables.
