One complaint I hear from women is they are tired of eating the same thing for lunch each day. When bored with food or unsure what to bring to work, it is tempting to eat out. If you can get in a rut like me, you want a new healthy lunch to go, especially when your mornings are busy.
I love trying new salads that are flavorful and filling and why my new favorite is a Greek Quinoa and Avocado Salad. It will definitely be added to my list of “Crystal’s Favorites” for lunches that will given in my upcoming weight loss class. It is delicious, filing and provides many benefits
The benefits of quinoa
Quinoa is a great substitute for rice and is one of the most protein-rich foods we can eat. It is a complete protein containing all nine essential amino acids. Full of fiber, it offers almost twice as much as other grains and is packed with iron, lysine, which is essential for tissue growth and repair, magnesium, and riboflavin B2.
The benefits of avocados
Besides being so tasty, avocados are also high in fiber and provide vitamin B, K and E. They are higher in monounsaturated fat, which is the good fat and decreases your LDL, bad cholesterol.
This recipe is so easy and became even easier when I started cooking quinoa in my rice cooker. I can put it in, leave it to cook and come back when I am ready to make my salad.
- 1/2 cup quinoa
- 1 cup of water
- 2 Roma tomatoes
- ½ cup of fresh spinach
- 2 TBS lemon juice
- 2 TBS olive oil
- ½ teaspoon of salt
- 2 medium avocados
- 1/4 cup of feta cheese
- Cook quinoa in rice cooker according to directions.
- In medium bowl, mix together cooked quinoa, tomatoes, lemon juice, oil and salt.
- Place on top of spinach and avocado and sprinkle with feta cheese.
For a lunch to go, make quinoa mixture ahead of time and store in refrigerator along, with spinach, avocado and cheese in another container. Grab both of them on your way out the door and mix together at lunch. Tip: Your avocado will stay fresh approximately one to days if you store it peeled and cut.
