Last weekend, I had the opportunity to speak for a Women’s Retreat on how to live out God’s purpose in our life and grow confident in Christ.
One step is to identify our values to be used for God’s glory. For example, one thing I value is having quality time with my husband and kids which happens, many times, around the dinner table. Not only do we learn about each other, but it gives us an opportunity to teach our kids how to eat and live healthy according to God’s word.

Yes, the struggle to get our kids to eat healthy is real. Our dinner table does not always consist of organic, fresh and every color of the rainbow. It is simple with basic concepts of healthy eating at home, which is better than fast food any time of the week. This recipe I received from a good friend Joseph Smith years ago and is a healthy meal my kids will eat.
5 TBS of all purpose flour (yes, it is white flour, but a moderate portion)
2 tsp of dried thyme
4 4oz chicken breast
1tsp of olive oil
1 purple onion, cut in slices
2 red bell pepper, cut in slices
1 cup of low sodium chicken broth
3 tsp of white wine vinegar
1 cup of crumbled feta cheese
Heat skillet on medium heat. Combine first four ingredients in a dish. Dredge chicken in mixture and place in skillet and cook for about 5 minutes on each side or until done. Take chicken out of skillet and keep warm. Spray skillet with cooking spray and add the remainder of the ingredients and cook until tender. When done sprinkle vegetables with half of the feta cheese and place chicken on top and sprinkle with remaining feta.

I serve this with a simple salad and they are happy with a few greens with this entree.
